Scrambled Curried Egg Whites with Cauliflower

Scrambled Egg Whites are very easy and super quick to make. A twist to traditional scrambled egg whites is to add some chopped Cauliflowers with Curry Powder. The combined version tastes like a Vegetable Curry with Eggs and makes a very healthy breakfast option. I recommend you eat this with Whole Wheat Melba Crackers.

Scrambled Curried Egg Whites with Cauliflower

  • 500 ml Egg Whites
  • 200 gms Chopped Cauliflower
  • 1 unit Chopped Tomato
  • 1 unit Thin Slices of Red Onion
  • 8 units White Mushrooms Slices
  • 1/2 cup Chives Finely Chopped
  • 7 sprays Pam Olive Spray
  • 1 tspn Curry Powder
  • 1/2 tspn Salt
  • 1/2 tspn Pepper
  • 1/2 tspn Ginger Paste
  • 1 tspn Garlic Paste
  • 1/2 cup water
  1. Heat a large saucepan.  Spray with Pam Spray.  Add the chopped onion, Ginger Paste and Garlic Paste. Once the onion looks golden brown, add in the tomato, mushrooms and cauliflowers. Spray more Pam Spray. Add water. 

  2. Once the above mixture is cooked, add in the egg whites. Stir for 1-2 minutes. Then add the curry powder, salt, and pepper.

  3. Once the egg white look cooked, switch off the heat. Garnish with chopped Chives and serve.
